Francesco Elmi


Francesco Elmi was born in Bologna 23rd December 1970. It was his beloved aunt and uncle who introduced him to the art of pasticceria. For Francesco, entering the laboratory of the historic Pasticceria Calderoni of Bologna as a student marks the most important moment of his education. However, he also benefited from two other great maestri pasticcieri, Rolando Morandin and Emanuele Saracino, with whom he perfected his technical know-how and from whom he learnt the ethical rigor with which he lives his profession.

Since 1994, he has been the advisor of Fabbri Spa, and as such is responsible for the courses of qualification and practical demonstration and actively collaborates in the research and development of the new semilavorati dolciari – semi-elaborated confectionaries – which are indispensable for the qualitative perfection of the production of pasticciere and gelatiere (ice cream making) confectionary. Francesco also collaborates with the Carpigiani Gelato (Ice cream) University of Bologna as a teacher and advisor, and this experience has endowed him with further technical wealth. Francesco Elmi possesses an operative familiarity together with the ability to transmit his own know-how that is essential to the pasticciere of talent. He is also the proprietor of the pasticceria Tiffany in Castel San Pietro, Province of Bologna, where he gives full expression to himself and his creative ideas in the art of confectionary.
